Corned Beef and Cabbage


Mind you I am not a fan of beer that is my husbands department, but I came across this recipe for Corned Beef and Cabbage that is wonderful. ;)







~George Killian's Irish Red Corned beef and Cabbage~

Ingredients:
5 pounds corned brisket of beef
12 oz George Killian's Irish Red
6 peppercorns or packaged spices
3 Carrots, peeled and quartered
3 onions peeled and quartered
1 medium-sized green cabbage cut into wedges
4 TBS melted butter

Placed the corned beef in water to cover it, and add 1 120z bottle of George Killian's Irish Red (Use only this beer we tried it with other ones and it just doesn't taste the same.. icky!) Add the peppercorn or pickling spices (they come with the corned beef when you buy your beef at the store)Cover the pot or Kettle bring to boil; reduce heat; and simmer 5 hours or until tender, skimming occasionally. During the last hour, add the carrots and onions and cover again. During the last 15 minutes, add the cabbage. Transfer meat and vegetables to platter and brush the vegetables with melted butter. Serve with boiled parsley potatoes, cooked separately.

Sounds good I may have to make this tomorrow. We love corned beef but only in march, Hey did you know a little vinegar served with the cabbage is wonderful? Memaw taught me that.
